Porridge is one of my favorite dishes especially at this time of year. It’s the reward after an early morning yoga practice, adding comfort to the already mellow vibe achieved on the yoga mat.
For some porridge is boring, tasteless and should stay in Oliver Twist style borstal institutions. They are right, unless of course you dress it up and make it the most delicious breakfast ever.
Try my fantastic recipe. Porridge will never be the same.
Recipe for Two Servings.
1 cup of Oats
2 cups of Water
Half a diced apple or blueberries, banana (or a little of all)
Sprinkle of Cinnamon
Sprinkle of dried coconut flakes.
Pecan, Walnuts or flaked almonds (or all)
Rice, soy or cows milk (or any kind of milk really)
Soak the oats in the water. You can cook oats without soaking first however they cook faster when soaked for a min of 10 mins. If you get on your yoga mat early in the morning it would be ideal to soak the oats just before you begin your yoga practice. They could also be soaked over night.
Add the apple to the oats and water . Cook on a high heat until it begins to boil. Then turn it right down to a low simmering heat.
Add the coconut and cinnamon. Simmer for approx 2-3 mins.
Take off heat. Put in breakfast bowls. Sprinkle with nuts, coconut, add a tiny drop of Maple Syrup (or sweetener of choice) and a drop of milk of choice.
Yummm! A great reward after a morning yoga practice. The fruit is so delicious as it softens when being cooked, releasing the flavours into the dish and you still get the crunchy bite from the nuts.
It’s so easy to make and only takes about 5-7 minutes if you have already pre-soaked the oats.
